A handful of fresh mint
2 Grilled pineapple chunks
4 oz almond water
2 shots of rum
Maple syrup
Absinthia Absinthe Superieure
Spray of fresh seltzer
Coconut water ice cubes
Muddle mint, a couple of pineapple chunks and 2 tablespoons of maple syrup in a cocktail shaker. Put regular ice, 3 oz almond water and ½ shot of absinthe in 2 short cocktail glasses and let chill. Add 2 shots of rum per person to the shaker and shake. Pour out absinthe/water/ice mixture from the cocktail glasses. Place coconut water ice cubes in the short glasses and strain the shaker’s contents over. Top with 1 ounce of Almond Water. Garnish with mint and a spray of fresh seltzer.
